For most of our coffees, we recommend brewing a 1:8 concentrate on a Hario Switch, then diluting that concentrate with 6 parts hot water. We usually add 2 drops of Lotus Magnesium drops, and 1 drop of Lotus Calcium, with a 25 gram dose.

1. Grind your dose! For a 25gram dose, we'd recommend a peak grind size at around 550µm (around 'medium-fine'. This is also the general thickness of a human nail). Grind a bit finer for a lower dose or a bit coarser for a larger dose.

2. Pre-wet your filter paper (in some cases, pre-wetting will help remove any loose paper particles that may otherwise go inside your coffee. In the cases of higher quality papers, pre-wetting can help shape the paper to the brewer, increasing contact points and speeding up percolation).  We recommend Hario V60 papers if trying to highlight acidity, and Cafec TH-3/T-90 (they are identical) filters for highlighting roast characteristics and caramelization while lowering perceived acidity. 

3. Close the toggle on the brewer (the switch should be 'up'). 'Bloom' (The initial pour is called the bloom, as gas escapes the newly wet coffee) the coffee with 2 parts 60°C water if possible. A 60°C bloom will help increase complexity and juiciness in the coffee, but if not possible, a rolling boil bloom will also yield good results. Hold the liquid in the brewer with the toggle on, and swirl the brewer to ensure all grinds are wet. No coffee should escape the brewer at this point. Hold for 30 seconds.

4. Release the toggle to drip the coffee into the vessel below. Once most of the bloom is released, close the toggle again (switch should again be 'up' to allow immersion). Pour in 6 parts rolling boil water into the coffee. Gently swirl, and let sit for one minute. After one minute, release the toggle and allow to drain.

5. Once drained, add in 6 parts bypass (just add hot water to the liquid coffee, do not use the brewer). Add in mineral drops at this point if using mineral drops.
